My middle daughter recently returned from the UK due to our Canadian borders closing, thanks to Covid-19. I’m very thankful I was able to get her home in time…but it also means my house is under quarantine for 14 days.
We’re currently on Day 3.
We’re all fine…my daughter who returned has a sinus cold, I’ve hooked up the Wii, the PS4 and the girls watch Netflix and Disney+, along with playing with the dogs, cleaning, listening to music etc…
With 3 basically-adult daughters (21, 19 and 17), I implemented a rule…someone must bake something every day. Cookies, muffins, pastry, cakes…doesn’t matter. It’s a good stress relief and it means my house is always yummy smelling.
I call that a win-win. My hips might not, but we’ll deal with that after the quarantine is lifted.
Today was my turn and I decided to try something I’ve been wanting to do but have been too chicken to try. Bread.
So far, whenever I attempt to make homemade bread, it’s horrible: the experience and the bread. I’ve bought a few recipe books that promise the easiest of recipes, I’ve watched videos, saved countless recipes I’ve found on Facebook…but I’m chicken and I admit it.
Well…considering the bread supply is dwindling (along with the toilet paper) in our home…I decided it was time to step up and face my insecurities when it comes to baking bread.
And I think I found the best recipe to use too! This No-Knead Bread from the NY Times website is so easy to make. Like uber easy. I pinkie swear!
First, I watched the above video to make sure. Then I followed the recipe. Last night, I mixed the ingredients and then it sit overnight. This morning, I followed the directions, baked it and voila…
I have a feeling I’m going to be making this every few days. Might attempt different kind of bread pans (as long as it has a lid) too.

What’s next…hmmm…I am in the mood for scones slathered with butter and strawberry jam! I still have a Mars Bar Lava Cake recipe to try in the crockpot too…stay tuned!
Glad everyone is home safe and sound. I am not working right now, which works out. Cause we do school work every day and then walk the dog for fresh air. It is challenging, but we just finished our first week and we survived. Play time for the weekend maybe go for a drive out to Kananaskis change of scenery. Be safe.
