When I see one of these tempting treats on a dessert plate – I can’t help but reach for it! Did you know that the origin of these are from Nanaimo, BC? I love Canadian treats! I’ve never personally been to Nanaimo but I want to. There’s a beautiful little resort there that I’d love to escape to with my laptop and write while staring out at the ocean.
This year as I bake, I’m doing something a little different. I’m normally a control freak when it comes to my baking and I have a really hard time ‘letting go’ and not stepping in to ‘help’ my kids as they attempt to help me. But this year I’m doing a ‘no hands’ approach and letting them do the heavy work while I make sure they read the directions. How’s that working out you’re asking? Well…my middle daughter made rice krispie squares but forgot the butter. FORGOT THE BUTTER! But we’re still eating them – they’re a bit dry, but still oh so good ๐
There are a lot of different methods to making these. I haven’t found one that ‘doesn’t’ taste good though. Here’s my recipe that I love to use – but you might have a different one (and if you do, I’d love for you to share it!)

Magic Kookie Bars
Ingredients:
1/2 cup Melted Butter
1 1/2 cups Graham Cracker Crumbs
2 cups Pecans
1/2 cup Semi Sweet Chocolate Chips
1/2 cup Butterscotch Chips
1 1/2 cups Shredded Coconut
1 1/2 cups Sweeted Canned Milk
Directions:
Pour melted butter in 13x9x2 inch pan.
Sprinkle graham cracker crumbs over melted butter.
Sprinkle pecans over graham crackers.
Sprinkle chocolate chips over pecans.
Sprinkle butterscotch chips over chocolate chips.
Sprinkle coconut over butterscotch chips.
Pour sweetened canned milk over coconut.
Bake at 350 degrees for 25 minutes.
Cool, cut and enjoy!
Did you know Safeway has Nanaimo Ice Cream just for Christmas? Sure they don’t seem to have my peppermint candy ice cream but they have that.
Old Fashioned Potato Candy
Ingredients:
1/2 (or 1 small) boiled potato
1 tablespoon butter or margarine
1/2 teaspoon vanilla extract
About 2 cups powdered sugar
1/2 cup peanut butter
Directions:
Mash potato, add butter, vanilla and enough powdered sugar to make a slightly stiff dough.
Roll out dough (on a surface dusted with powdered sugar) and spread on the peanut butter.
Roll dough up (as for jelly roll) to make a log.
Cut into pieces, let air dry for about an hour. Store in air tight container.
Makes about 2 dozen confections.
