Cinnamon Streusel Loaf

- 1/2 Cup butter, softened
- 3/4 Cup granulated sugar
- 2 eggs
- 2 tsp vanilla
- 2-1/4 Cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2/3 Cup buttermilk
- Streusel:
- 3/4 Cup packed light brown sugar
- 2/3 Cup all-purpose flour
- 1/2 tsp cinnamon
- 1/2 Cup cold butter
Instructions
- Streusel: In a small bowl, stir together the sugar, flour and cinnamon. Using a pastry blender or 2 knives, cut in the butter until in coarse crumbs. Set aside.
- In a large bowl, beat the butter with sugar until it is light and fluffy. Beat in eggs, 1 at a time. Next, beat in the vanilla. Whisk together the flour, baking powder, baking soda and salt. Stir this into butter mixture alternately with buttermilk; therefore, making 3 additions of flour mixture and 2 of buttermilk.
- Scoop half of the batter into parchment paper–lined 9 x 5-inch loaf pan. Top the batter with half of the streusel mixture. Scrape remaining batter over top and sprinkle with remaining streusel mix.
- Bake at 325ºF until cake tester inserted in centre comes out clean (about 65 minutes). Allow the loaf to cool in the pan on a rack for approximately 10 minutes. Turn loaf out onto rack; let cool completely.
