Cinnamon Streusel Loaf

Ingredients
  • 1/2 Cup butter, softened
  • 3/4 Cup granulated sugar
  • 2 eggs
  • 2 tsp vanilla
  • 2-1/4 Cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2/3 Cup buttermilk
  • Streusel:
  • 3/4 Cup packed light brown sugar
  • 2/3 Cup all-purpose flour
  • 1/2 tsp cinnamon
  • 1/2 Cup cold butter
Instructions
  1. Streusel: In a small bowl, stir together the sugar, flour and cinnamon. Using a pastry blender or 2 knives, cut in the butter until in coarse crumbs. Set aside.
  2. In a large bowl, beat the butter with sugar until it is light and fluffy. Beat in eggs, 1 at a time. Next, beat in the vanilla. Whisk together the flour, baking powder, baking soda and salt. Stir this into butter mixture alternately with buttermilk; therefore, making 3 additions of flour mixture and 2 of buttermilk.
  3. Scoop half of the batter into parchment paper–lined 9 x 5-inch loaf pan. Top the batter with half of the streusel mixture. Scrape remaining batter over top and sprinkle with remaining streusel mix.
  4. Bake at 325ºF until cake tester inserted in centre comes out clean (about 65 minutes). Allow the loaf to cool in the pan on a rack for approximately 10 minutes. Turn loaf out onto rack; let cool completely.
